The gum exudes from the cracks on the bark of the tree under difficult conditions such as heat,dryness, wounds.
The ability of gum arabic to form concentrated solutions of low viscosity has led to its widespread use in confectionery products, particularly those with high sugar content such as pastilles where it functions by reducing sugar crystallization
Gum Arabic powder is extensively used in the products of beverage, essence, juice, beer, cake, bread, dairy products, chocolate and bubble gum etc. It is the natural emulsifier, thickener, suspending concrete, adhesive, glazing agent and stabilizer.
Gum Arabic is multifunctional and is used in wide range of diverse food products.
It's major uses are in the stabilisation of flavour emulsion, in the encapsulation of flavour and in the confectionery industry.
Gum Arabic is also used in other products, notably in paints and inks, pharmaceuticals and adhesives.
